What product do you make to sell at Salamanca Market?
The Huon Pine Picnic Planks were designed to supply a niche market for cheese appreciators and lovers of sharing food who were looking for an aesthetically beautiful thin yet large serving platter instead of a heavy chunky chopping board. Whether it’s a simple stand alone cheese for one or a mountain of delicious antipasto for a gathering, there is something very earthy and natural about serving food on wood and the magnificent beauty of Huon Pine certainly creates a focal point of any eating occasion.
Tell us a bit more about Huon Pine picnic planks…
The Huon Pine Picnic Planks are made from stunning pieces of ancient Tasmanian History, for presenting cheese, great for picnics or sharing plate.
Beautifully designed and hand finished, the Huon Pine Picnic Planks are made from the rare and exquisite Tasmanian Huon Pine. The timber is unique to Tasmania and the Picnic Planks are made from thousands of year old fallen logs that have been reclaimed from the southern river beds and beaches of Tasmania.
The Huon Pine planks are naturally rot resistant, inhibiting the growth of bacteria, making this magnificent centre piece ideally suitable for serving and sharing all foods. They make wonderful gifts and are a timeless heirloom that can be enjoyed for generations to come.
What led you into this business?
Gilbert has always had a love affair with rare species of Tasmanian timber and has dabbled in furniture making over the years. I have a working background in food primarily as a pastry chef and then later involved in family run production of gourmet foods. We both love food, cooking, preparing, eating and sharing and always had various pieces of Huon Pine planks in the kitchen that we used for food preparation and serving. The trial production of our first Huon Pine Picnic Planks were received extremely well by our first customers.
I absolutely love Salamanca. It is a great place to test a new product, talk to customers and network with fellow stall holders. Salamanca in the winter is often cold and challenging but allows you the quieter times to reflect on your business and plan for the busier months ahead. Salamanca in the summer is alive with the buzz of visitors excited to explore our beautiful Island, locals buying veggies, and lazy chats over coffee with friends in the sunshine. It’s a wonderful atmosphere to be apart of.

Apart from Salamanca we sell our Huon Pine picnic planks at Grandvewe Cheesery in Birch’s Bay, The Cheese Shop in Burnie, Trevallyn Grocer in Trevallyn, Online and directly from our workshop in Woodbridge by appointment.
